What role could a Production Coordinator fill in a scrum workflow?
If a Project Supervisor is acting as the Product Owner
and a Producer is filling in as the Scrum Master
Where would a coordinator fit into this picture?
Perhaps the successful implementation of Scrum does not require any "acting" or "filling in" at all, but genuine organizational change, and new roles in a new picture entirely.

I'd also like to express a few words of caution:

It sounds like you have people able and willing to transition to these new roles, which is a really good thing! But it's important these people are able to fully embrace their new role, and not simply change job title and keep the same responsibilities and behaviours that were useful under the old system. This might require a great amount of adjustment and personal development from the people involved. It's likely they will need some support in doing this.
What about turning the question around; what is it that our product needs and who meets those needs?
Role X will take over PO, role Y will take over SM and we need something for Role Z does not sound like transforming to Scrum, but like just throwing a Scrum blanket over the worn out sofa. You can do so, but the basis will remain the worn out sofa.
If your organization is willing to transform to Scrum, forget the old rules. Make those people SM that were willling to change and willing to get into Scrum. Involve those in the transformation.
Make sure the POs will be the guys that are visionaries, who can lead but at the same time be a team player, who can communicate and negotiate and are committed to doing so. POs are critical to the success of the product, they need to know the product and they need to be qualified to be a PO.
Besides that there are only two other roles, Development Team and Stakeholder (chicken and pigs). Which one would the Production Coordinator fit into?
